Happy Holidays!


New Years Eve is just around the corner and the reservation book is seeing some action! Here we are last year taking a moment to toast our friends before the celebration really started.

Sea Bass!



Sea Bass is back! This absolutely wonderful fish is returning to our menu Friday night. It is in short supply so make your reservations early and tell us you want Sea Bass!
I love working with this fish. Its thick, buttery texture lends itself well to a number of methods of cookery. My favorite, and I'm sure you will agree, is to pansear it until it gets crispy. I finish it quickly in a very hot oven and garnish with a light sauce. The large, juicy flake is a fishlovers dream. I would also recommend grilling thick pieces of sea bass and baste with a light oil seasoned with herb and lemon. Remember - this fish stands up well all by itself and really needs very little seasoning.

Jazz at The Cafe!

The Jazz Festival kicks all day Friday in downtown Warren. If it rains, we’ll host a jazz ensemble from 12-2 and then our 7 piece Big Band Friday evening from 8-11 pm. It’s Joe’s send-off performance and he promises to go out on a high note! You may also catch the wonderful trombone color commentary of the legendary Pete Pepke – celebrating his 40th year as the inventor of the kazoo trombone mute!

Don't let the tripel's light color and delicate aroma fool you, this is one serious beer brewed with maximum effort. First, they introduce the freshest barley to crystal filtered water. Second, they add the best hops shipped direct from Europe. Third, their special yeast is the catalyst for the fermentation, gobbling the sugar and creating alcohol as it works. Chili Changes!

The weather has inspired my Black Bean Chili again! Except this time, I'm using the trimming from our Filet Mignon instead of regular ol' ground beef. I use our house seasoning blend (sazon) and I will share the complete recipe to those who ask. Topped with sour cream and fresh local scallions, it is some very memorable stuff!

Shad roe should be showing up soon. I spoke with my fish monger today and shad roe supply may run short. Seems that there are restrictions on some of the upstream locations and traditional netting is limited. At any rate, we are on the BUY list and will post the moment I know when it will be available.

Shorted!

Seems that demand exceeded supply on seabass yesterday. We were allocated none. Sorry for the teaser. BUT! We DID manage to get some huge softshell crabs in today!

Celebrate Friday with Live Jazz!

Once again, Joe Glarner and Friends will be playing the great standards of Jazz from 8-11pm at The Cafe. Along with great live music, enjoy beautiful cocktails skillfully mixed by Meredith. She'll help usher out the winter with great, fresh-brewed Southern Tier draft beers and a big selection of wines by the glass.
We are talking about keeping the kitchen open later so we can serve our Bruschetta Pizza at the bar while the band plays. Seems that our little bar snacks of pimento cheese and crackers just doesn't last very long!

Thursday Delivery!

Here it comes! Seabass! If you haven't had it, it's amazing. If you have had it, you know what I'm talking about.
This fish is a wonder to work with. We typically get one single ten-pound filet in at one time. White as a sheet, the thickness ranges from 1 inch at the tail to 3 inches at the head end. We prefer to cook it hard and fast! This way, it achieves a cripness on the exterior and a juicy and flaky center. Best fish I've ever tasted.
Let's talk about some methods of preparation! Seabass lends itself well to fruited butters and chilis!

Spring, finally...

Now that it is comfortable enough to walk the street again, we are beginning to see more friends come around to snack at Forte and The Cafe. We've extended Lunch at Forte to Monday-Friday 11-3pm. We are also considering extending our Sunday Brunch at The Cafe into May. Give us a reply and let us know if you will be by!
