Here it is! 24 hours from Honolulu! My friend Jim is always seems to be first in line.

The King of Salmon

We know how she feels. Every time we get in a whole Chinook Salmon just like that one, we get a little emotional, too. The nice folks at Tofino Inlet, Clayoquot Sound, British Columbia, are doing some wonderful things organically raising these fish. Please drop by their website and see the time and care they put into their product. When it arrives in my kitchen, it shows - and I will pass that along to you as buttery sushi, velvety cured or crisp crusted panroast. I'm very passionate about fresh fish and have never seen better. I love working with this salmon and hope you get the opportunity to enjoy some.

We are expecting UPS delivery of 20 pounds of some of the worlds finest tuna flown in directly to The Cafe from Hawaii on Thursday afternoon. Please stay tuned. I will post the moment it arrives...

New Years Eve is just around the corner and the reservation book is seeing some action! Here we are last year taking a moment to toast our friends before the celebration really started.
We're still planning an exciting menu and choosing the champagne but one thing is certain. The Cafe and Forte will celebrating! Pete and friends will be at The Cafe that night so it is sure to be a memorable evening.

Sea Bass!

Sea Bass is back! This absolutely wonderful fish is returning to our menu Friday night. It is in short supply so make your reservations early and tell us you want Sea Bass!

I love working with this fish. Its thick, buttery texture lends itself well to a number of methods of cookery. My favorite, and I'm sure you will agree, is to pansear it until it gets crispy. I finish it quickly in a very hot oven and garnish with a light sauce. The large, juicy flake is a fishlovers dream. I would also recommend grilling thick pieces of sea bass and baste with a light oil seasoned with herb and lemon. Remember - this fish stands up well all by itself and really needs very little seasoning.
