The Fortini!

The creation of our cocktail has come to a spectacular and dizzying conclusion! The Fortini is a wonderful little concoction of chambourd, grand marnier, fruit juices and champagne. Fruity yet dry and pale red, there are plenty bubbles to tickle your nose! Stop in during Friday Happy Hour for the unveiling of the new cocktail menu and the swinging start to a great weekend! Shad Roe Season!
Shad roe should be showing up soon. I spoke with my fish monger today and shad roe supply may run short. Seems that there are restrictions on some of the upstream locations and traditional netting is limited. At any rate, we are on the BUY list and will post the moment I know when it will be available.

Thursday Delivery!
This fish is a wonder to work with. We typically get one single ten-pound filet in at one time. White as a sheet, the thickness ranges from 1 inch at the tail to 3 inches at the head end. We prefer to cook it hard and fast! This way, it achieves a cripness on the exterior and a juicy and flaky center. Best fish I've ever tasted.
Let's talk about some methods of preparation! Seabass lends itself well to fruited butters and chilis!
